Riminia reste bianche is a description of a morphological trait of one of the forms of the ancient Sicilian Timilia population. The name reflects the presence of white awns, which distinguishes this form from the variety with black awns.

Plants of this population are tall, reaching 125–135 cm in height. The wheat belongs to the "short-cycle" or late-maturing crops with a growing season of approximately 130 days, traditionally sown in late winter or early spring.

The population is characterized by drought tolerance and adaptability to the local climatic conditions of Sicily. The harvested grain is used in the production of traditional bakery products, pasta, and craft beer.
