The variety is a natural mutation of the French variety Aramon noir, possessing gray-colored berries. The variety is characterized by a late or very late ripening period, and the flowers are hermaphroditic. The bunches and berries of Aramon gris are larger than those of the base variety Aramon noir.

The plant is not resistant to frost and fungal diseases, and is sensitive to spring frosts due to early bud burst. The variety is highly productive on fertile soils and is used exclusively in winemaking for the production of white wines.

Historically, the variety was widespread in Languedoc-Roussillon, but its plantings have decreased significantly. It is rarely included in modern vineyards, mainly as collection or experimental material.
