The Ottofile variety is a historical heirloom variety that was introduced to Italy from North America in the 19th century. The name is due to the structure of the cob, on which the kernels are arranged strictly in eight rows.
The plant is small in size and forms long and narrow cobs. The kernels are of the flint type, have a rounded shape and a vitreous surface, and their color varies from yellow to red-orange. The variety is characterized by a low yield at the level of 12–15 c/ha.
The crop is traditionally cultivated using manual labor without the use of chemical herbicides and pesticides. Harvesting is carried out in September or October. The main purpose of the variety is the production of flour with high taste qualities.
