A complex of biological and chemical properties of root crops that determines the yield of crystalline sugar and the efficiency of the factory. The deciding factor is the balance between sucrose and non-sugars that hinder crystallization.

The primary indicators of suitability are the concentration of potassium, sodium, and α-amino nitrogen, which retain sucrose in molasses. Reducing substances, which decompose during juice purification, and soluble pectins, which hinder filtration in young or diseased root crops, also have a negative impact.
Physical properties such as turgor retention, the absence of mechanical damage, low impurity content, and the absence of bolting directly affect the processability of the raw material. Excessive nitrogen nutrition during cultivation promotes the accumulation of harmful nitrogenous compounds, thereby reducing the sugar content of the root crops.
