Physical properties such as turgor retention, the absence of mechanical damage, low impurity content, and the absence of bolting directly affect the processability of the raw material. Excessive nitrogen nutrition during cultivation promotes the accumulation of harmful nitrogenous compounds, thereby reducing the sugar content of the root crops.
