Selecting the sowing time for table beet regulates the risk of bolting, the occurrence of physiological defects (zoning), and the crop's suitability for storage. The crop requires warmed soil for a successful start and the avoidance of extreme heat during root development.

Table beet seeds begin to germinate at a soil temperature of +5...+8°C; however, optimal sowing times should ensure higher temperatures, as exposure to cold during the early growth stages triggers the formation of flower stalks instead of marketable root crops. Furthermore, sowing into insufficiently warmed soil increases the vulnerability of young plants to fungal diseases.

The choice of sowing time determines product quality during storage. To prevent the appearance of white rings in the root cross-section (zoning), which occurs under high temperatures during active growth, later sowing dates, including those in July, are recommended for winter storage. At the same time, table beet allows for succession planting with a 10–15 day interval to obtain a stable yield throughout the season.
