By the time of technical maturity, sugar beet consists of approximately 75% water, with the remaining 25% accounting for dry matter. About 75% of this volume is sucrose, while the rest consists of non-sugars, including fiber, cellulose, pectin substances, proteins, amides, and ash elements.

The dry matter content directly determines the sugar yield and the quality of raw materials, as an excess of non-sugars hinders crystallization and increases production losses. The accumulation dynamics of this indicator also serve as an indicator of the completion of the growing season and the physiological maturity of the root crops.
