Raspberry Transportability

The ability of raspberry fruits to maintain their marketable appearance during transport, primarily determined by fruit firmness (toughness). It is measured by the crushing force in Newtons using devices such as a penetrometer.

To objectively assess raspberry transportability, an instrumental method for determining fruit firmness, expressed in Newtons (N), is used. Cultivars with a firmness of up to 5.0 N are considered non-transportable and too soft, whereas fruits suitable for transport withstand a force in the range of 7.2–8.4 N and above.

High firmness is a critical requirement for mechanical harvesting and reduces the susceptibility of berries to fungal infections, particularly gray mold (Botrytis cinerea). The transportability index is also influenced by skin toughness, the nature of the fruit detachment from the receptacle, its shape, and the stability of these parameters under changing weather conditions.
