During chewing, volatile aromatic compounds such as pyrazines and methional are perceived through retronasal olfaction, forming the specific profile of the variety.

High scores (4–5) indicate excellent consumer qualities, whereas low values (1–3) often point to wateriness, coarse consistency, or the presence of bitterness caused by excess solanine. Soil conditions significantly influence the formation of taste properties: the best indicators are noted on sandy loam soils, while peat-bog soils and excessive moisture often reduce the tasting score.

Poor agricultural practices, in particular an excess of nitrogen fertilizers with a potassium deficiency, lead to a deterioration in taste and the appearance of off-odors.
