Suitability of lettuce for freezing

Lettuce is characterized by low suitability for freezing due to its high water content and delicate leaf cell structure. The process of ice crystal formation leads to irreversible tissue destruction, rendering whole leaves unsuitable for consumption after thawing.

The high moisture content in lettuce leaves leads to the expansion of ice crystals during freezing, which rupture cell walls and membranes. Upon thawing, the plant tissue loses turgor, its crisp texture, and marketability, becoming limp and watery.

Unlike starchy vegetables, lettuce does not possess a structure resistant to low-temperature exposure. Freezing whole leaves is considered technologically impractical, as the only method to preserve the raw material is to process it into a puree for further thermal treatment.
