Variety description

The plant is vigorous, reaching a height of up to 150 cm, with large, vertically growing leaves. The roots have a cylindrical or slightly conical shape with a circular cross-section. The root surface varies from smooth to slightly rough, the color is yellowish-white on the outside and white or off-white on the inside. The weight of a marketable root reaches 700 g with a length of up to 50 cm.

The variety is distinguished by pronounced pungency, sharpness, and a high content of essential oils, vitamin C, phosphorus, and carbohydrates. It is propagated exclusively vegetatively through root cuttings. Cultivation requires the removal of secondary shoots during the growing season to form a high-quality root. Planting is carried out in the spring, and harvesting begins in November and continues throughout the winter period.

Used as a fresh condiment for meat and fish dishes, as well as a raw material for the industrial production of sauces with the addition of apple, cranberry, pepper, or parsley.
