The De Saint-Saens variety originates from the Norman town of Saint-Saens. The plant is characterized by enormous dimensions: the head diameter can exceed one meter, and the weight can reach 20 kg. The plant's leaves also distinguish themselves by their large size, reaching one meter in length.
The development cycle of the variety can span three years: two years for head formation and a third year for seed production. When stored in cool rooms, the heads retain their freshness throughout the winter if they are hung roots upward.
