The plant is characterized by an elongated head shape. The leaves are dark red in color with prominent white veins.

Varieties within the group are divided into early and late types. Late varieties require a forcing process after the first frosts. To achieve a marketable appearance and reduce bitterness, a blanching process is used in the dark or by tying the leaves.

The produce is used in cooking both fresh and cooked: grilled, in risotto, pasta, or baked.
