Variety description

The variety is considered a natural hybrid of red radicchio and endive. The plant forms a loose, voluminous head, resembling an opening rose in shape with wavy leaf edges. The leaf color is cream-white with fine marble-like spots and streaks of burgundy or purple.

It belongs to the winter type; the harvest period lasts from October to March. To obtain a marketable appearance and reduce bitterness, the plants are subjected to blanching in the dark. The leaves have a crunchy texture and a mild sweet-bitter taste.

It is used primarily fresh for salads, and is also suitable for thermal processing as an ingredient in various dishes.
