The Shamouti tree has medium vigor, a dense crown, and an upright branching habit, which can be thorny. The leaves are large, lanceolate, dark green with winged petioles. The variety is best adapted to the Mediterranean climate, characterized by cold hardiness, but is sensitive to extreme heat and high humidity.

The fruits have an oval or elliptical shape with thick, tough, finely pitted rind. The flesh is tender, juicy, and possesses a sweet taste with a balance of sugars and acids. The fruits are distinguished by good keeping quality and suitability for transport, however, they are poorly suited for industrial juice processing. On certain rootstocks, the variety may be affected by xyloporosis.
