The fruits have a spheroidal shape, which facilitates mechanical peeling. The kernel is distinguished by a delicate aroma that persists after roasting, a mild taste, and ease of skin separation. Due to the low fat content, the nuts are resistant to rancidity and have good keeping quality.
The plant is sensitive to extreme weather conditions, including drought and heat, which causes stress and increases susceptibility to fungal diseases such as Cytospora. Yield varies in the range of 20 to 30 c/ha.
The variety is a benchmark raw material for the confectionery industry, used in the production of gianduja, truffles, and cakes. In the relevant regions of Italy, the produce is protected by the Nocciola Piemonte IGP geographical indication status.
