The plant is vigorous, upright, with silvery-gray deeply dissected leaves. A distinctive feature of the variety, reflected in the name inerme, is the absence of spines on the leaves. The stalks are wide, thick, and tender, with a taste reminiscent of artichoke.

The variety is perennial in zones 7–10, but is often grown as an annual crop, tolerating temperatures as low as -7°C. To obtain high-quality produce, pre-harvest blanching of the stalks is used by tying the leaves and covering them for three weeks prior to harvest.
