The plant forms a robust rosette of large, deeply dissected silvery-gray leaves covered with white down on the underside. A characteristic feature of the variety is the reddish or raspberry-pink shades at the bases of the stalks. The plant height varies from 60–90 cm to 150–200 cm. The cardoon forms large decorative purple thistle-like inflorescences.
The basal leaf stalks are consumed as food, which have a delicate taste after culinary processing. To improve product quality and reduce bitterness, it is recommended to blanch the stalks in the autumn by wrapping them with material 3–4 weeks before harvest. The growing period is 90–120 days.
The variety is a heat-loving plant (hardiness zone 7–10); in cold regions, it is grown as an annual or with protection. The crop is susceptible to aphids, slugs, snails, as well as gray mold, powdery mildew, and root rot.
