This varietal group was formed by folk selection over the centuries and possesses the status of a protected geographical indication. The inflorescences are characterized by their large size and nearly spherical shape, with a color varying from green to purple.

The plants are distinguished by the absence of spines and an extremely low number of internal hairs, which makes the bracts very tender. The harvest is collected manually from January to May. Varieties of this type are suitable for raw consumption, canning, and the preparation of traditional dishes.
