The Rojo de Corella variety belongs to the species Cynara cardunculus L. and is classified in culinary practice as a cardoon, rather than an artichoke. The leaf stalks of this plant are used for food.

Commercial cultivation of the variety is declining due to the high labor intensity of the process for obtaining marketable produce. To blanch the Rojo de Corella stalks, a method of mounding the plant with soil is used, which lasts about 45 days and requires manual labor to form a mound that protects the stalks from exposure to sunlight.
