The variety is a perennial herbaceous plant, which in cultivation is often grown as an annual. The leaves are deeply dissected, bluish-gray or silvery-gray in color, and practically spineless.

The plant forms dense, fleshy inflorescences of a rounded shape. A characteristic feature is the purple or violet shades on the bracts of the inflorescences, as well as the high taste quality of the fleshy base of the head.

The variety is considered a traditional cultural variety type from the Lazio region in Italy. It is used as a gourmet vegetable crop, and thanks to the silvery foliage and large inflorescences, the plant is also used for ornamental purposes.
