The Spadone variety belongs to the cardoon plant (Cynara cardunculus var. altilis) and is often confused with the artichoke due to belonging to the same species. The plant reaches a height of over 80 cm and differs from other regional varieties primarily by its entire, rather than serrated, leaf blade with a white central vein.

A characteristic feature is the use of the variety for the production of "humpbacked cardoon". In the cultivation process, the plants are partially buried in the ground, which causes them to take on an arched shape, and their petioles become white, crisp, tender, and lose excessive bitterness, acquiring a sweetish taste.

The variety is common in the Nizza Monferrato area in Piedmont, where it is traditionally grown on sandy soils along the Belbo river. Farmers perform annual seed selection, preserving the best characteristics of the ecotype and reducing the phenotypic variability of the population.
