The variety is a chance seedling, a descendant of the Luikenapfel variety. The tree is vigorous, long-lived, with a broad spreading crown, capable of reaching a height of 6–10 meters. It is distinguished by high winter hardiness and resistance to scab and powdery mildew, but is susceptible to apple tree canker and fire blight.

The fruits are small or medium-sized, round-flattened, lemon-yellow in color, sometimes with a red blush. The flesh is firm and juicy, acidic in taste with a high content of sugars and phenolic compounds. The variety requires warm locations for the fruits to ripen fully.

Bittenfelder Sämling is considered a classic processing variety, unsuitable for fresh consumption due to its high acidity. Due to its strong root system and good compatibility with other varieties, it is widely used as a rootstock for growing standard-form apple trees.
