Fruits of the apple variety Hermien van Eibergen ripen in October. They are characterized by a golden-yellow skin color, on which a reddish blush or stripes often appear. The fruit flesh is firm and juicy, and the taste is characterized as a balanced sweet-sour.

The plant has good winter hardiness and demonstrates a healthy growth habit. The tree height varies depending on the rootstock and cultivation method: from low-stem forms 2.5–3 meters high to high-stem forms up to 7–9 meters; cultivation as an espalier is also possible. Pollinator varieties are required for yield, such as Alkmene, Dubbele Bellefleur, Elstar and Ingrid Marie.
