The variety name comes from the Italian word meaning "oil", which is associated with a visual characteristic of the fruits: there are noticeable areas of vitrification on their skin and in the flesh. These apples are the result of centuries of folk selection in the regions of Piedmont, Tuscany, and other parts of Italy.

The fruits are described as having thin, juicy white flesh with a sweet aroma. The ripening period for such apples usually falls at the end of September. These varieties are not the product of industrial breeding and are preserved primarily as a local cultural resource by enthusiasts and biodiversity banks.
