The Sønderskov tree is characterized by moderate vigor and a broad crown, developing most successfully in fertile soils with protection from the wind. The fruits are large in size, the skin is greasy, and the ground color varies from greenish-yellow to matte yellow with a pink blush.

The fruit flesh is white-yellow, loose, and very juicy, distinguished by a refreshing sweet and sour taste. Harvest maturity occurs at the end of September; the fruits have good keeping quality. The variety shows a tendency toward biennial bearing, which limits its use in commercial fruit growing.

The apples are used both fresh and in cooking, for example for making puree. Research has confirmed the variety's suitability for industrial processing, in particular for creating frozen apple cubes, as the flesh is not prone to severe browning.
