Farga variety trees are characterized by an open crown shape with dense foliage and medium-sized elliptical-lanceolate leaves. The variety exhibits high growth vigor and the ability to adapt to rocky and calcareous soils, as well as resistance to drought and moderate frosts.
Fruiting occurs late and is characterized by periodicity. The variety is resistant to olive knot (Pseudomonas savastanoi), but is sensitive to the olive fruit fly and leaf spot. Due to the high fruit detachment force, mechanized harvesting is difficult, requiring manual harvesting.
The resulting oil has high stability, an increased oleic acid content (about 78%), and a significant level of polyphenols. The sensory profile is dominated by notes of green fruits, fresh grass, and almond.
