FRANTOIANA, also known as Frantoio, is an autochthonous variety formed as a result of folk selection. Trees of this variety often act as pollinators for other varieties and are the basis of plantations in many regions, including protected designation systems.
The fruits retain a green color until the moment of harvest. The resulting oil is characterized by a balanced taste with pronounced bitterness and pungency. Harvest quality depends directly on adherence to traditional cultivation practices, including regular pruning and cultivation conditions.
