Variety description

10 August 2026

The variety has an upright crown and medium to high vigor. The fruits are medium to large in size, oval and symmetrical in shape, and adhere firmly to the branches, which complicates mechanized harvesting. The leaves are lanceolate, flat, and elongated.

The plant is adapted to calcareous soils and possesses high drought tolerance. The variety shows medium sensitivity to winter cold and moderate susceptibility to diseases such as olive knot (tuberculosis of the olive), verticillium wilt, and olive peacock spot.

Oil from Hojiblanca fruits has a golden-green color. The flavor profile includes notes of freshly cut grass, tomato leaf, artichoke, apple, and almond, complemented by moderate bitterness and pungency with a medium oleic acid content.
