Variety description

The variety is traditional, originating from the province of Córdoba, Spain. The tree is of medium vigor with upright shoots and a wide, dense crown. The variety is classified as late-ripening (harvested in November–December) and is prone to alternate bearing with high productivity.

The fruits have a symmetrical oval shape, and the pulp-to-pit ratio is about 8:1. The oil has a complex aroma with notes of fresh grass, artichoke, green apple, almond, and tomato plant, and is characterized by medium viscosity and a specific pungency.

The plant is adapted to calcareous and shallow soils and tolerates winter cold and drought. Moderate sensitivity to Verticillium wilt, olive knot (tuberculosis), and the fungal leaf disease 'repilo' has been noted. High fruit detachment force makes mechanized harvesting difficult.
