Bonifacio is a traditional Sicilian landrace. Flowering is late, and fruiting occurs on spurs and short shoots. The variety requires pollinator varieties as it is self-incompatible.
The fruits are characterized by a semi-soft shell, with a kernel yield of 40–45%. The kernels are medium-sized, elongated in shape, with a dark color and deep wrinkles. The variety is distinguished by a high proportion of double kernels, amounting to 20–25%.
Kernel quality is determined by a high oleic acid content and low linoleic acid content, which is of value for breeding programs to improve nutritional indicators and oil properties.
