Pollino is a traditional form of rye that developed in the conditions of the Pollino National Park in Italy. The crop is cultivated primarily at altitudes of more than 750 meters above sea level and demonstrates stable yields under extensive farming methods.
The grain of this landrace is characterized by a protein content of about 14.8% on a dry matter basis and a moisture content of about 11.0%. In addition to traditional use for flour and bread baking, the variety is used in the production of alcoholic beverages and is undergoing research in the field of micro-malting.
