The variety belongs to early maturity groups. The plant is characterized by vigorous development. The tubers have a round-oval shape, the color of the skin and flesh is white.
During heat treatment, the tuber flesh acquires a dry, crumbly texture. The variety was historically used for table purposes, local consumption, and export. Genetic studies indicate the proximity of Early Puritan to the Early Rose and Beauty of Hebron varieties.
