The tubers of the variety have an oval shape, thin skin and light yellow flesh. The eyes of the tubers are very shallow, which makes peeling easier. The plant reaches a medium height during the flowering period.
The variety has a high level of resistance to the pathogen Colletotrichum coccodes, which causes black dot. Edurne is intended for fresh consumption and has characteristics suitable for frying and boiling.
