The variety belongs to winter forms of soft wheat and is used primarily for flour production in the baking industry. In terms of heading time, Bilancia is close to the Enola variety.
The grain of the variety has a soft texture and typical amylose content for baking varieties, which is confirmed by the presence of Pina-D1a/Pinb-D1a alleles. During trials, the yield of the variety was recorded at a level of about 5.62 t/ha.
