Trigu Biancu is an old local population of durum wheat adapted to the climatic conditions of the island of Sardinia. The plant is tall, reaching a height of 180 cm, which causes it to be prone to lodging, and belongs to late-maturing forms.

The variety exhibits better adaptation to low-input farming systems and is characterized by specific properties of gluten protein fractions. The crop yield may decrease under intensive nitrogen fertilizer application in adverse weather conditions.

Traditionally, this variety is used for the production of bakery products, pasta, and the typical Sardinian product—fregola. In agronomic publications, there is no information regarding the official use of the prefix Bonolvesu in the name.
