This crop is a landrace adapted to Mediterranean conditions. It is traditionally used for the production of pasta and bakery products, in particular Castelvetrano bread. "Reste bianche" in the name is a morphological description of the white awns of the ear.

The plant is distinguished by an extremely short growing season, for which it received the name "three-month wheat". It is sown in January or March as a substitute for winter crops under unfavorable weather conditions. The population is valued for its high content of protein, B vitamins, fiber and minerals.
