The variety is an indigenous Greek landrace, historically originating from the Thessaly region. As a hulled wheat, it requires the mandatory removal of glumes after harvest. The variety is adapted to the local soil and climatic conditions of Greece, although its yield level may be lower than that of modern commercial varieties.

The grain is characterized by an increased content of magnesium, antioxidants, fiber, and lysine. Products made from it are processed into whole-grain flour, bulgur, and flakes, which are used in the preparation of traditional bread and pasta products.
