The variety is autochthonous to Aquitaine and the Garonne valley; its origin remains unclear. The plant is characterized by high vigor. Leaves are large, dark green, with 3-5 lobes. Clusters are dense, cylindrical-conical, of medium or large size. Berries are small or medium, rounded, turning dark blue or black when ripe, and have thick skin.

The variety is mid-late ripening and demanding of heat. Due to early bud break, it is at risk of spring frosts and is also sensitive to wind due to the risk of shoot breakage. It possesses partial resistance to downy mildew and powdery mildew, while being highly susceptible to grey mold and black rot. The variety is distinguished by high fertility and stable yields.

Bouchalès is intended exclusively for the production of red wines characterized by pronounced tannins. Due to the simplicity of its flavor profile, the grape is more often used in blends, although varietal winemaking is also possible.
