The maturity groups for celery are determined by the number of days from full emergence to the onset of technical maturity, at which point the petioles reach optimal succulence and size. Early-maturing varieties produce marketable yields in 80–100 days, whereas mid- and late-maturing varieties require from 140 to 180 days.

Due to the long growing season, the crop is primarily grown using the transplant method, where a seedling age of 60–90 days is added to the field development period. Proper selection of the maturity group is critical to prevent premature bolting and to ensure harvest before the onset of unfavorable temperatures.
