Organoleptically, the product is characterized as spicy, with bitter-sweet and salty notes, which is due to the natural sodium content in the tissues.
In breeding practice, this trait is evaluated by an expert scoring method in comparison with standard varieties. The agronomic management of the flavor profile critically depends on the blanching of the stalks: isolating plants from light several weeks before harvest reduces the concentration of essential oils, decreasing bitterness and making the texture less fibrous.
Celery varieties are divided into green, which require mandatory blanching, and self-blanching, with the intensity of the aroma directly correlating with the saturation of the green color. A disruption in nutritional balance, in particular an excess of nitrates, negatively affects taste qualities, provoking the development of pronounced bitterness.
