The maturity group of chicory is determined by the number of days from emergence to the technical maturity of the roots suitable for subsequent chicon forcing.

For chicory, the maturity period is measured by the number of days from seedling emergence to the time when the roots are ready for harvest. In Witloof-type varieties, technical maturity is reached at the end of the growing season, when the root has reached a size sufficient for the subsequent accumulation of inulin and the formation of a chicon during the forcing process.

Classification by maturity groups is of practical importance for establishing a supply chain. Mid-season varieties require about 75–90 days for development, while mid-late varieties mature in 70–85 days. An important factor is that the duration of the growing season directly influences the accumulation of intybin, which determines the bitterness of the product, and the technological capacity of the roots for high-quality forcing during the autumn-winter period.
