Freezing suitability of chicory

Chicory is not suitable for freezing in its fresh state due to the breakdown of cell walls and loss of leaf texture. The use of frozen produce is only permissible after thermal processing.

Leafy forms of chicory, including radicchio, tolerate freezing extremely poorly, as the freezing of intracellular moisture leads to the destruction of tissue structure. Upon thawing, the leaves lose their crispness and become soft and wilted, which precludes their use in fresh salads. Such a product can only be used for the subsequent preparation of soups or stews, where consistency is not a critical factor.

Chicory roots used for forcing can be stored in a frozen state in shredded form at a temperature of -2°C for up to six months. However, tender witloof heads, due to their high moisture content, undergo radical changes in physical properties after freezing, making their intended use in fresh form impossible.
