The primary method of consuming chicory fresh is characterized by a specific bitter taste due to the presence of the glycoside intybin. To balance the flavor, soaking, removing the central vein, and combining with ingredients of contrasting taste are used.

The leaves of the crop are used in green salads, and the dense heads of Witloof-type varieties are used as a base for appetizers with cheese or nuts. The purity of the produce for consumption is ensured by the technology of forcing roots in the dark, which eliminates contact with the soil and reduces nitrate accumulation.
