Plum maturity groups are determined based on phenological observations of the dates when harvest maturity is reached. Depending on the regional classification, they are divided into super-early, early, mid-season, and late cultivars, with ripening ranging from July to October. This trait is genetically determined but can be adjusted by the actual sum of active temperatures in a given growing season.

When planning orchards, cultivars from different maturity groups are used to create a fresh produce supply chain and ensure climatic suitability to regional conditions. Early cultivars are generally characterized by shorter shelf life and a tendency to drop, while late-maturing cultivars require a longer growing period for full ripening and possess different storage characteristics.
