The keeping quality of onions is defined as the marketable yield expressed as a percentage of the initial mass after a storage period. A key indicator of suitability for long-term storage is the dry matter content in the bulb, with an optimal level of 17–22%.

Technological maturity, necessary for successful storage, occurs at mass lodging of the tops (about 70%). Subsequent high-quality drying of the bulbs is a mandatory step that minimizes the risk of infection with neck and bacterial rots and ensures the preservation of marketable qualities until spring.
