Peach frost hardiness is the ability of its reproductive buds and wood tissues to maintain viability when exposed to low sub-zero temperatures, assessed by the artificial freezing method.

To determine frost hardiness, the method of direct freezing of shoots in climatic chambers is used, where the percentage of reproductive bud mortality or the threshold temperatures that tree tissues can withstand are measured. The level of resistance is assessed based on the ability of a specific cultivar to withstand damage during controlled temperature reduction.

The index depends on the bud morphogenesis phase, reaching a maximum during the sporogenous tissue phase of the anther and decreasing sharply after the completion of meiosis. Due to a short dormancy period, the peach is susceptible to the risk of deacclimation during winter thaws, which makes trees vulnerable to late winter and early spring recurrent frosts.
