Due to a long growing season of 180–200 days for root varieties and slow seed germination, celery in open fields is grown primarily through transplants. The crop is sensitive to vernalization: exposure to low temperatures at early stages triggers premature bolting. Although seedlings can withstand frosts down to –6 °C, disruptions in the temperature regime negatively affect the quality of root vegetables and petioles.
The agronomy of root celery includes the necessary removal of soil from around the developing root and the pruning of side roots to prevent branching. The crop is highly demanding regarding boron content, the deficiency of which causes internal hollows, and potassium nutrition. A stable water regime is a critical factor, as soil desiccation reduces the marketability of the produce; however, excessive moisture and waterlogging are detrimental to plant development.
