Unlike sweet sorghum varieties, grain sorghum is characterized by a dry or pithy stem, where the accumulation of water-soluble sugars is minimal. The plant's energy metabolism is focused on starch synthesis in the caryopsis, which makes sugar content in the stems a secondary trait not used for breeding purposes.
The total sugar content in grain sorghum is approximately 1–3%. In the breeding process for grain varieties, priority is given to grain weight, protein content, and the absence of tannins, as selection for stem sugar content physiologically competes with grain yield.
