Asparagus is characterized by an extremely high respiration rate (9–40 µmol CO₂/g per hour), which leads to rapid depletion of sugars and nutrients. The most critical physiological process post-harvest is lignification—the hardening of cell walls in the lower part of the spear, which turns tender tissues into tough, fibrous structures unsuitable for consumption.
To maintain marketability and flavor, a 'cold chain' at 0–2°C is critical. Any delay in cooling activates enzymes that degrade texture. Quality standards for fresh product are determined by the tightness of the spear tip: its opening indicates over-ripening and the transition to the fern-like stem stage, rendering the asparagus non-marketable.
Methods of consumption depend on the type of asparagus: white asparagus requires peeling due to its density and bitterness, whereas thin green asparagus spears can be consumed fresh without additional processing. Specific flavor and market quality traits of white asparagus depend directly on etiolation—the absence of light exposure during the growth period.
